Easy Breakfast Casserole

If you know me, you are probably laughing out loud that I am posting about food right now, especially a recipe I have tried. For those of you who don’t – I have a reputation to NOT be the best cook. Seriously, I can bake all day, but when it comes to cooking anything besides sweets, call my husband. However, of the many, many tried-and-failed recipes I’ve done, there are always a few that come out so much better than I’d hoped & those are what gives me hope and makes me keep cooking :). This morning, was one of those meals!

I told myself that part of this blog WILL BE about food and recipes, so I decided I better start trying some new recipes out to share with you all. Today, I whipped up a breakfast casserole and it was SO easy, pretty quick, & DELICIOUS! That’s right, 9th grade home ec teacher – I cooked something EDIBLE & my husband and son could not get enough of it! BAM WHAT! (Any other mommas catch themselves dropping Disney one-liners?! Liv & Maddie gets full credit for BAM WHAT….daily.)

Anyways, if you’re ever in a pinch or need to feed your family and friends breakfast and don’t want to be spending all morning flipping pancakes, try this recipe! If I can make it, I have faith anyone can

  • 1 can Grands buttermilk biscuits
  • 1 lb pork sausage
  • 1/2 cup shredded Mozzarella cheese
  • 1/2 cup shredded Sharp Cheddar
  • 8 eggs
  • 3/4 cup milk

 

Preheat the oven to 425 degrees.

Cut each biscuit into four pieces and layer them on the bottom of a greased casserole pan.12835031_10156598918820564_579066195_n

Then, (my least favorite part of cooking, browning the meat)! Brown the pork sausage, drain well, and then spread over the biscuits.

Next, beat the eggs. Add milk and mix well. Pour egg mixture over the sausage and biscuits.

*Optional: If you wanted to add any onions, tomatoes, peppers, etc. – now would be the perfect place to do so!

Lastly, sprinkle the cheese on top evenly. Add salt or pepper to taste.

Bake casserole for 30-35 minutes. Let sit for a few minutes before cutting.12443627_10156598919205564_1317501872_o

We added a little bit of salsa to ours, per our taste, and it was phenomenal! My son could not get enough of it!
